Milkfish has a mild, sweet, and clean flavor with a firm, flaky white texture. The highly prized belly is exceptionally rich, fatty, and tender, offering a creamy, umami-packed bite. It is a versatile fish well-suited for frying, broths, and grilling, but contains numerous fine bones.
